Since I’m eating low carb, I thought I’d share a couple of pizza crust recipes, made the “low carb” way, from Allrecipes. 😉

Cauliflower Pizza Crust

Ingredients

1/2 head cauliflower, coarsely chopped
1/2 cup shredded Italian cheese blend
1/4 cup chopped fresh parsley
1 egg
1 teaspoon chopped garlic
salt and ground black pepper to taste

Directions

Place cauliflower pieces through the feeding tube of the food processor using the grating blade; pulse until all the cauliflower is shredded.
Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 15 minutes.

Transfer cauliflower to a large bowl and refrigerate, stirring occasionally, until cooled, about 15 minutes.

Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper or a silicon mat.

Stir Italian cheese blend, parsley, egg, garlic, salt, and pepper into cauliflower until evenly incorporated. Pour mixture onto the prepared baking sheet; press and shape into a pizza crust.

Bake in the preheated oven until lightly browned, about 15 minutes.

Summer Squash Pizza Crust

Ingredients

4 cups finely shredded zucchini or yellow summer squash
3/4 cup all-purpose flour — Substitute With Almond Meal For Low Carb
3/4 cup grated Parmesan cheese
2 eggs, beaten
1/2 teaspoon ground black pepper
salt to taste
1/2 cup shredded mozzarella cheese

Directions

Preheat oven to 350 degrees F (175 degrees C). Once zucchini or summer squash has been shredded (I recommend a food processor) lightly salt the squash and transfer it to a strainer. Let stand 15 to 30 minutes and press all remaining liquid out of squash.

In a medium-sized mixing bowl, combine squash, flour, Parmesan cheese, mozzarella cheese, eggs, pepper and salt. Mix well. Spread the mixture into a greased and floured jelly roll pan. Bake for 25 minutes in the preheated oven.

Remove the crust from the oven and change the oven’s temperature to broil. Brush the top of the crust with oil, and then broil the crust for 3 to 5 minutes until the top is lightly browned.

Allow the crust to cool slightly and slide spatula underneath all edges and under the middle. Place a large baking sheet over the top of the crust and gently flip the crust over so that the bottom of the crust is now facing upwards.

Because it can be difficult to flip the crust smoothly, it may be necessary to cut the crust in half to facilitate the flipping of the crust.

If you want to omit the flipping stage, that is okay, but the crust won’t be as crunchy. Brush the top of the crust with oil and broil for another 3 to 5 minutes until the top is browned. Cover with toppings as desired.

Tips On How To Be A Fantastic Grandmother

There are great grandmothers, and there are those who, even if their intentions are pure, make life harder for mom and dads. Are you a first-time grandmother who wants to be remembered by the family as the best grandparent ever? Here are some ideas that you may want to consider.

Volunteer as babysitter sometimes

Being a new mom or dad is hard. It takes commitment for 24 hours a day, but that doesn’t mean the parent can’t take a break. If you have time in your hands, visit your new grandson or granddaughter and let the parents have their alone time. Tell them to hit the road and have fun every once in a while or take a long, nice bath without having them worry about the kids crying.

Lead by example

Grandparents should lead by example if they want to teach parents how to do parenting properly. Show them that the kids should always be important no matter how tough times get. In other countries that are ravaged by war, parents always think of their kids first by seeking aid from charities that provide free food and education. If you’re comfortably living in a free country, there’s no reason not to prioritize kids. A child’s education, health, and happiness are very important so don’t forget to provide them this while offering them love and support along the way. Help the child do his or her homework, feed them healthy food, and make them happy by doing little thoughtful things for them.

Give positive encouragement

Being very critical of new parents can be detrimental to their progress. As such, when they do something wrong, don’t correct them by shouting or making them feel like they just did the worst mistake a person can make. Instead, lead by example and suggest ways on how to improve their parenting style. You’ve been there, and you’ve done that so they will listen to you. And when they do something right, praise them. Encouragement and positive feedback goes a long way.

A Quick Low Carb Lunch

When I’m in a hurry and in town doing errands, I usually want something quick that I can grab and take home with me. That is, if it’s around meal time.

I LOVE Mexican food…LOVE it! I love Taco Bell’s taco salad. However, it has to be the (beef) kind. I order it with EXTRA SOUR CREAM!

I DON’T eat the shell or those red things. I also stop when I get to the rice and beans. Although, sometimes I find myself there and still eating! 😮 Sometimes it’s hard, I have found a few things that help.

* Drinking about (2) glasses or bottles of water…( I try to do this before and after) eating this yummy taco salad! (y)
* Rewarding myself with yummy and sugar free chocolate
* Eating a boiled egg along with the salad
* Adding a bit more cheese, (have to watch the cheese though).

I’m back with lots of discipline and MOTIVATED! I’m down almost 10 pounds this year. I did cheat a couple of times, and (of course), it slowed my process. *Slap My Hand!!! 🙂

Chocolate Chip Oat No-Bake Cookies – From Prepared Pantry

You have to treat yourself once in awhile, and especially whenever you cross a weight loss milestone! 🙂

From the Prepared Pantry Site:

Everyone likes a chocolate chip cookie. They oats make it a chewy chocolate chip cookie. It’s a wholesome cookie that you won’t mind including in your child’s lunch box.

Ingredients

1 cup brown sugar
1/4 cup butter
1/3 cup evaporated milk
1/4 cup peanut butter
1 cup quick rolled oats
1/2 teaspoon vanilla extract
1/2 cup chopped salted peanuts
1 cup milk chocolate chips

Directions

In a saucepan, cook the brown sugar, evaporated milk, and butter. Cook over medium heat, stirring continually, until the mixture comes to boil. Cook for one minute longer.

Remove from heat, stir in peanut butter, quick oats, and vanilla. Let cool until just warm to the touch then stir in the peanuts and chocolate chips, stirring just until the chips and peanuts are dispersed.

Drop the cookies by the spoonful onto a nonstick baking sheet or waxed paper. Cool completely in the refrigerator.

Baker’s note:

If you stir the chocolate chips in before they have sufficiently cooled, they will melt. That’s not bad but you will have chocolate cookies instead of chocolate chip cookies.

The Good For You Angel Food Cake, Or Not?

cake I love angel food cake! Sometimes, there is just NOTHING better than angel food cake, (some people like to call it “sponge cake”) with strawberries on top. YUMMY! Now, Sponge Cake don’t even sound appealing to me at all! lol) However, that’s what some people call it. 😉

 

 

 

 

 

 

Speaking of cake, my grandson usually has to visit me (2 or 3) times per week to grab from Papa’s breakfast cake stash. lol — I sure don’t mind my grandkids coming over, as I love them dearly! My grandson loves those Little Debbie cakes! 🙂

So, is Angel Food cake better for you than regular cake? Quite a few folks perceive that to be the case. I’ve actually heard people say that there is mostly air in “Sponge Cake.” There’s that phrase again! LOL

I’ve done some research on the topic and found that this type of cake can be gluten free if you don’t use wheat flour. (If cooked from scratch) That’s a plus right there due to a large portion of healthy conscience folks following a gluten-free eating plan.

Or, is it any better than those Little Debbie cakes above??

Don’t Let That Good Food Go To Your Hips! Half a Dozen Tips For Holidays

As some of you know, I’m eating low carb. However, I’m human and my reins un-tighten and I slip off the wagon (temporarily) now and then. Oh, come on, everyone does – (temporarily) from time to time.

 

 

Do I call myself a failure whenever I do this? I tend to, yes. And I beat myself up for it at times, although, I try not to. Like I said, I’m human and for sure…NOT perfect!

Someone pitched a (share an article for review) with the opening statement today:

You survived Thanksgiving, but you’re not out of the woods yet. 😉

So, why didn’t I get on those scales the day after Thanksgiving? Well, I knew I had over-indulged that day. Do I then, keep doing the same until the holidays are over? That sure wouldn’t be a smart thing to do would it?! Some people do…this is what (we) call (yo-yo dieting).

Well, guess what? I’ve been there!

I’ve done it, been there and done that too many times. Resolution after resolution, yep, I know all about that. 😉

I happen to know just about all the tricks, tips and the RIGHT ways to go about losing or maintaining weight. In fact, I have (half a dozen) good ones I’d like to share with you today. These tips are especially geared for the (2) biggest (over-indulgent, that’s what I like to call them in regards to weight maintaining) days of the year…Thanksgiving and Christmas. I always try to incorporate these tips as often as I can during the holidays; and even all year around even.

After all, if you’re trying to lose a few pounds or just trying to stay true to what you’ve lost, it should be a complete change in lifestyle and healthy (life-long) habits. Right?? Well, if you’ve paid attention, I’ve intentionally stated the word: SHOULD above. However, that doesn’t always make us a success…knowing the shoulds and knowing the smart things to do. That being said, let’s get to those (6) tips! I’m indeed preaching to myself and WILL find myself accountable by sharing today! <3

Something I was craving today (french fried onions) ended up NOT being so bad with the low carb way of eating. So, I had it for an afternoon snack. However, I did want to over-dip my hand in the bag a couple more times…although, I managed self control! Yeah, for me! lol

Here are those one half dozen tips for you; I certainly hope you find them helpful

1) Stay Off The Scales During The Holidays – Too often a rise in those numbers can trigger emotional eating. It is advisable to wait until after all the hustle and bustle is over to get back on the scales. Although, keeping THIS in the back of your mind helps too. Your conscience self knows you have to weigh yourself the beginning of the year. Keep on track with healthy eating habits or whatever eating lifestyle or program you follow. Hide your scales out of the bathroom if you have to.

2) Drink Extra Water – Keep a daily, ACTIVE journal for the amount of water you consume. Water speeds up your digestive system. You don’t need a sluggish (pipe system) at holiday time. Would NOT be a good thing for aiming for weight loss or maintenance. Purchase bottled water, flavored water, or whatever you have to do to get yourself into a daily habit of drinking large amounts of water. It flushes out your system and it’s also good for the many organs and muscles in your body. I accidentally found out those flavored waters are good if kept in the freezer (only for a few minutes); it tastes slushy….that’s if you’re into slushes. Also, it’s always a good idea to drink (2) full glasses or bottled water before a holiday meal.

3) Eat Before You Go – Not only do you need to consume water before you go to a dinner party or what have you, but it’s also a wise choice to eat a few healthy snacks before you leave the house. You may think this would be counter-productive, however, it’s not. Your stomach will be approximately half full when you sit down to that big meal. Believe me, you WILL consume less!! Also, listen to your body when you are done eating the main meal; chances are, you won’t feel like dessert. But if you do, remember choose wisely and watch portion size.

4) Bring Healthy Dishes – When asked to prepare dishes for a special holiday event, always opt to make up something that fits your lifestyle or a weight loss program you’re following. It would certainly be too tempting to prepare foods that YOU consider unhealthy. For example, I’m following low carb; so it certainly would be counter productive for me to prepare a (carb loaded) potato dish. It would be more fitting (for me) to prepare a clean and healthy vegetable dish. Even a raw veggie and dip type of dish would be a wise choice. I could always look up a delicious low carb dish to whip up. Don’t bring something that you would have to slap your hand a few times for double dipping! If all else fails, bring something that you DON’T like. lol 😉

5) Keep Moving – Being active helps with working off those calories. It helps melt off those butter-ball turkeys and pumpkin pie calories. However, you certainly didn’t need for me to tell you this, did you? This is just a reminder. LOL – For example; take the stairs instead of elevators. Park your car way in back of the parking lot when you go to the mall. Every step counts! Again, I’m preaching to myself as well! I do my workout routines in the mornings. Once I’m up and going, I’m fine. It’s getting up early in the first place that is challenging. I found setting my alarm clock or phone way across the room helps. It does the trick believe it or not! One more thing that works for me is I’m a grandmother of two sweet kids, and being called on to babysit helps tremendously.

6) Watch Your Alcohol Intake – Yes, you need to watch how much booze you drink. If at the very least, drink in careful moderation. Alcohol usually stimulates the taste buds, making foods (seem) to taste better. DUH…You will more than likely over indulge. 🙁 I know, it sucks right?! Not to mention most alcohol beverages are bathed in un-wanted calories and carbs.

5 Unexpected DIY Cleaning Solutions Perfect For Your Kitchen

And of course after all the fun and laughs, you will have to take care of the mess left in the kitchen.

 

Take advantage of the bonding time to also encourage the kids to help out in cleaning the kitchen. That way you are also imparting them good discipline on cleaning up after themselves as a habit.

Homemade Dishwasher Detergent

For your very own homemade dishwasher detergent, you will need to mix these ingredients in a large bowl: one cup of salt, at least two to three cups of baking soda, and another cup of borax. dishwasher

Put it in a seal-tight container. Use two tablespoons of this mixture at most (but one tablespoon should be enough) and mix it with vinegar.

Kitchen Floor Cleaner

Kitchen floors are always a mess after having a baking session with the grandkids. Removing those drips from the cookie batter off the floor may be tricky but with this floor cleaner, it won’t be a problem. The entire ingredients you need for this cleaning alternative are one gallon of hot water, ¾ cup of olive oil and ½ cup of lemon juice. This cleaning solution works well for wood type floorings. For a much basic floor cleaner, you can mop those dirt and stains away using just a gallon of hot water mixed with enough white vinegar.

It’s an unlikely floor cleaning agent but it will effectively kill off those bacteria as well as sanitize your floors.

Homemade All-Purpose Cleaner

Making your all-purpose cleaner can be easy with these few natural ingredients. Mix together half a cup of vinegar and ¼ cup of baking soda into a large container with two liters of water. You can use this cleaning solution to leave your countertops neat and germ-free. The acidity of the vinegar can help you disinfect most of the surface area of your kitchen. Now you wouldn’t have to worry about your grandkids getting unknown germs.

Lemon Juice and Salt Paste

Lemon juice or any particular citric juice mixed with enough salt to make a paste can make a good effective cleaning solution. This cleaning solution is perfect for disinfecting and polishing your stainless steel sink and kitchen counters. This lemony paste can make do with most of the messes stuck in any of your kitchen surfaces. With the help of the lemon’s acidity combined with kosher salt, it can remove grease, oil, and any sticky substance off those counters.

They are also effective in removing those oily marks in pot handles and sink faucets.

Lemon Peels and Vinegar Dishwashing Liquid

Don’t throw away those lemon peels just yet. You’ll find that you can still use those lemon peels for making another cleaning solution – an alternative for your dishwashing liquid. Store those lemon peels in a large mason jar filled with vinegar. Leave it to set for up to two days at most. After the two days is up, transfer the lemon vinegar liquid into another container (you can reuse old dishwashing liquid bottles, if you have any) that is half filled with water and a few drops of essential oil or lavender oil. That’s it. It’s great to use for removing those sticky mac and cheese off the pan and cleaning that thick batter in your mixing bowls.

These are just some of the great cleaning recipes you can make at home, that way you can also teach your grandkids when they’re much older. Efficiently making use of your family bonding time while teaching them a few good tricks that are useful for when the occasion calls for it in the near future.

Outdoor Summer Time Fun With Grandkids and Work Outs For Grandma

Before technology was attached to the hip of just about every child or grandchild, playing outdoors was the thing to do to get in some exercise time with your little ones. The word, “tablet” was labeled as a simple pad of paper that you wrote in with a pen or pencil.

 

 

Technology has literally taken the place of active playing with the kiddos; making it difficult to keep them active and in good shape. Sure, technology today is excellent for learning and keeping up with your child’s studies in school or looking up just the right element for teaching your kids various things.

However, today’s society is concerned about a generation of grandchildren/children becoming obese. Tech tablets, iPhones and laptops have taken over. Although, there are excellent ways to keep them moving and away from all the tech stuff, (at least a good portion of the time).

Getting Your Grandchildren Outdoors Is Key!

One Dozen Summer Fun Ideas

* Outside Workout Routine – Summertime is a good time for this activity. Pick either the early morning or late evening hours to beat the heat. Try and make the routines fun for the kiddos and YOU as well. Maybe watch some videos/youtubes to get a few ideas flowing for the outdoors.

* Trip To The Park – Walking, running and playing are all excellent activities at the park. I see a lot of moms and grandparents walking with strollers. However, that’s not all there is to do at the park. There are usually slides, swings and teeter-totters for the kids to play on too. These are fun activities for grandparents to stay active. Most often, it’s a good workout just chasing and keeping up with them!


* Find Hidden Objects – Scavenger Hunt – This is an all-time favorite for many kids. Grandparents can have some fun with this. You can offer a small dollar amount for the child that finds the most objects. However, there are other rewards you can offer as well. Maybe make them a favorite food or dessert. You can also take the kids on a special outing.

* Walking – If you are caring for three to six month year olds and toddler age grandchildren, always have a stroller on hand and take them walking with you. This will give you an incentive for walking outdoors. Also, it’s always encouraged to walk as a family. The ideal time for this is in the evenings.

* Swimming – This is an all-time favorite among the kiddos during the hot summer months. I know this Grandma loves the pool. Get them out with you for some fun; although, safety is number one while swimming with kids. Life jackets, noodles, and innertubes are musts for safety.

* Hula Hooping – Tell me you haven’t heard of the hula hoop! lol 🙂 This type of activity would, of course, be for the older grandchildren in your family. A lot of folks call hula hooping “hula dancing.” Work up some fun moves with the hoops. A good idea would be to watch a few youtubes on this fun activity.

* Back Yard Ball Games – What child doesn’t enjoy ballgames? I know my grandkids LOVES playing ball outside. Be a “cool Grandma” and get outside and play ballgames they enjoy. Softball, kickball, soccer or just ball rolling are all great for extra activity.

* Frisbee – Frisbee has been a fun past time for years. However, for the younger kiddos, special attention would have to be practiced for safety. It would be easier and safer to work with (smaller than average) frisbees. 🙂

* Water Balloon Fun – This activity is great for the very hot summer days. Water balloons entice laughter while cooling the young ones off, (and you too Grandma) while having lots of fun. Water balloons are sure to please the kids and grown ups of all ages.

* Jump Roping – Playing jump rope doesn’t have to be just for the girls, although, for the majority, more girls like this activity more than boys. Grandparents need to be in fair shape to participate. (Grandma), if you workout to begin with, of course, you won’t have any problems keeping up. 🙂

* Trip To The Zoo – Going to the zoo is always a workout with children along. Make walking fun by visiting your grandchildren’s favorite animals. Pack some fun lunches and let them help you with making their lunch. Find an area with shade to sit down and eat; most often, there are picnic tables all over the zoo park. A trip to the zoo will be fun for sharing special moments and picture taking to remember for always.

* Gardening – Most Grandmoms love to garden, and chances are your grandkids would love to help out. Purchase flowers that are vivid in color to make the flower beds colorful and bright. Try and get them active with you by making gardening gloves and T-shirts just for them. Be as creative as you like. The more creative, the better to entice your little ones to join in. 🙂

The whole idea for this blog post is for getting grandkids and grandparents together for some fun summer activities that will become nice memories. Let’s face it, playing outdoors is a far better option than sitting inside and playing computer games or phone texting.
